Eat Your Veggies!

If you’re like me, you have to make an extra effort to eat an adequate amount of veggies each day. First, I did not grow up eating lots of daily vegetables. Secondly, preparing them always seems time consuming, because I prefer to eat them cooked instead of raw. This problem must be solved because the benefits of eating vegetables far outweigh the inconvenience of preparing them.

“Juicing” is helpful for some people. Not only is it convenient to drink vegetables, you can get creative with flavors by adding a little ginger, or a fruit to the mix to change the flavor profile. Creating your own veggie blend at home, instead of buying it from the grocery store can help you avoid the extra sugar that is added to several consumer brand vegetable juices.


I always advocate meal prepping if you have time. If you can cook a pot of collard greens, steam a bunch of broccoli, or bake a few sweet potatoes in advance, you won’t have to scramble to make vegetables during the week. Having a head of lettuce, cucumbers, and tomatoes in your fridge regularly might increase the possibility of eating a salad everyday. The only challenge with stocking up on lots of veggies is that you have to eat them quite soon after purchasing them because they will spoil. And you can’t get the money back that you spent to buy them.
